Real Girl’s Kitchen: Haricots verts & spicy buttermilk salad

Sometimes, this girl just doesn’t feel like eating a salad! That’s why these sexy haricots verts are the perfect solution to any lunch time salad blues.

I call them sexy because they are usually referred to as the “French green bean” due to the fact that they are longer and skinnier than the American bean. They are loaded with lots of chlorophyll that helps to clean your blood and have the slightest hint of sweetness. I love these lean green machines and I think you will, too.

Ingredients:

  • Haricots Verts
  • Cherry tomatoes

For the Spicy Buttermilk Dressing:

  • 1/2 cup buttermilk
  • 2 tablespoons sour cream
  • 1 tablespoon mayonnaise
  • 3 cloves pressed garlic
  • 3 tablespoons of fresh lime juice
  • 1/2 cup cilantro, chopped
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Directions:

Boil a large pot of water. Once rolling, add the haricots verts and let cook for two to three minutes. Be careful not to overcook; you want to keep these crunchy! Remove from heat and place beans in to a cold bath (a bowl filled with ice water). This keeps the haricots verts bright green and crunchy. Quarter the cherry tomatoes. Mix above ingredients in a bowl for the dressing. Once green beans are cool, scatter the tomatoes across them and drizzle the dressing.

Bonus Real Girl’s Kitchen tip:
